A drop of our Dutch vintner’s robust Merlot elicits a come-hither fusion of coconut, anise, wild chom chom, and yam. This deliberate, staccato, almost noxiously exotic aroma teases and nibbles at lips, bits, and hips. Aged in Slavic oak, we follow with a precise, sixty-second steel barrel immersion to give the rich, round blend a crisp edge. At Chim Chim Charoo Vineyards, we aren’t known for our winemaking. Boondoggle a bit longer and we will be.
